“Too Lazy to Bake Cookies but Really Want Fresh-Baked Cookies” Cookie Bars

Submitted by: Lori Meloch, Program Director, Office of Professional Support & Client Protection Sometimes I really want fresh-baked cookies, but I don’t feel like getting out all the ingredients, then making the dough, and then cooking each batch individually. Extra lazyI know. This recipe gives you cookie bars in essentially two quick steps. You mix the ingredients and bake! 1 box vanilla or yellow cake mix 2 large eggs 1/2 cup (1 stick) butter melted 2 cups chocolate chips Preheat the oven to 350 degrees. Mix the cake mix, eggs, and melted butter with a mixer or hand mixer on medium speed until blended. Stir in the chocolate chips with a spoon. Spray a 9 by 12 glass baking dish with nonstick cooking spray. Spread the batter into the baking dish. Bake at 350 degrees for 20 minutes. Let cool and cut into cookie bars (or dig in while it’s still hot but the bars won’t hold together as well). Enjoy with an ice-cold milk!
